DOUGH
INGREDIENNTS
 2.50 lbs hard flour
 6 oz sugar
 3 oz fresh yeast or 90 grms. instant yeast
 0.50 oz salt
 1 tbsp vanilla extract
 4 eggs
 3 oz margarine
 ½ cup milk and 3/4 cup of water
 1 tsp ground cinnamon
FILLING
 12 oz brown sugar or 50% sugar and 50% rapadura
 2 oz cinnamon...optional raisins, walnut, apple
 3 oz margarine...to glaze
TOPPING
 8 oz powdered sugar
 3 oz margarine
 8 oz cream cheese...optional nutella, caramel, walnut, raisins, crystallized fruit

INSTRUCTIONS

DOUGH
1- put in a bowl, yeast, sugar, salt, vanilla extract, margarine
2- warm the milk and add it, stir all the ingredients and rise for 15 minutes
3- add eggs, cinnamon and mix
4- add the mixture on the flour and knead vigorously, gradually add enough water to masten the flour and form a soft dough....NOTE if you do it with a machine, knead 5 minutes at high speed
5- rest the dough for 20 minutes
6- spread flour on a table an roll out the dough 1 centimeter thick , varnish with melted margarine and sprinkle with sugar and cinnamon powder, filled with dry fruits of your choice
7- roll the dough loosely
8- cut portions of the desired size and place them on a previously greased baking sheet
9- rest 20 minutes or until doubled in size, bake at 250 degrees fahrenheit 20 minutes

TOPPING
1- in a pot place margarine, bring to a simmer add powdered sugar if stop stirring
2- add the cream cheese and cook 1 minute
3- decorate the cinnamon rolls with the mixture and with nuts of your choice
