DIRECTIONS
1- wash the figs and make a cross shaped cut on the top
2- dissolve the limestone in 9 cups of water
3- immerse the figs and let them rest overnight
4- in a pot dissolve the sugar, the brown sugar or panela in 1/2 cup of water and add lemon zest
5- simmer wash the figs and remove all the limestone add them to the honey and cook for 3 hours over low heat, stir constantly until cooked
NOTE
if necessary add water hot little by little during cooking until cooked and honey has been absirbed
