INGREDIENTS
 1.50 cups olives oil
 3 cups grated carrot
 5 eggs
 3 cups flour
 2 cups sugar
 1 tsp baking soda
 1 tsp baking powder
 1.50 tsp cinnamon powder
 ½ tsp nutmeg
 1 cup raisins, walnut, macadamia nut and crushed almond
FILLING AND TOPPING
 16 oz cream cheese
 ½ cup sugar powder
 1 tsp almond extract
 3 oz butter
 ¼ cup grated almond
 ¼ cup walnut crused

DIRECTIONS
1- In a bowl place eggs, sugar, oil and carrot, beat 1 minute
2- add flour, baking soda, baking powder, cinnamon powder and nutmeg, beat 1 minute
3- froured the nuts and incorporate in mix with movements envelopes
4- preheat the oven to 350 degrees fahrenheit, grease and floured a pan, pour the mixture and bake 45 or 50 minutes

FILLING AND TOPPING
1- place the butter, sugar an almond extract in a bowl, beat for 8 minutes, add cheese and beat 3 more minutes
2- reserve a part for the filling and another to cover

ASSEMBLY
1- Cool the cake, cut in a half and fill with the cream cheese mixture
2- cover the cake with the other part of the mixture and decorate with crushed almond and walnut
